These no-bake, gluten-free, vegan protein balls are great for breakfast or as a snack!
1/2 cup almond flour
1/2 cup gluten free quick/instant oats
1/4 cup vanilla protein powder
1 tablespoon ground cinnamon
1/4 teaspoon sea salt
1/4 cup honey or granulated stevia
3/4 cup creamy almond butter
1/4 cup coconut oil room temperature
1/4 teaspoon butter extract
1/2 teaspoon vanilla extract
Cinnamon Sugar Coating:
1/4 cup granulated stevia
2 teaspoon ground cinnamon
In a blender or food processor, add all of the ingredients, except cinnamon sugar coating. Blend on high until completely combined, about 1 minute. (If the mixture is too wet, add more almond flour, one tablespoon at a time. If it's too dry, add more honey and/or almond butter. Place the mixture in the refrigerator to chill for at least 30 minutes.
Once chilled, form into 1.5 inch balls and place on a baking sheet lined with parchment paper.
For the cinnamon sugar coating, combine the stevia and cinnamon together in a small bowl. Roll each protein ball into the mixture to coat well.
