Snickerdoodle Protein Balls

These no-bake, gluten-free, vegan protein balls are great for breakfast or as a snack!


Ingredients

  • 1/2 cup almond flour

  • 1/2 cup gluten free quick/instant oats

  • 1/4 cup vanilla protein powder

  • 1 tablespoon ground cinnamon

  • 1/4 teaspoon sea salt

  • 1/4 cup honey or granulated stevia

  • 3/4 cup creamy almond butter

  • 1/4 cup coconut oil room temperature

  • 1/4 teaspoon butter extract

  • 1/2 teaspoon vanilla extract

  • Cinnamon Sugar Coating:

  • 1/4 cup granulated stevia

  • 2 teaspoon ground cinnamon

Instructions

  1. In a blender or food processor, add all of the ingredients, except cinnamon sugar coating. Blend on high until completely combined, about 1 minute. (If the mixture is too wet, add more almond flour, one tablespoon at a time. If it's too dry, add more honey and/or almond butter. Place the mixture in the refrigerator to chill for at least 30 minutes.

  2. Once chilled, form into 1.5 inch balls and place on a baking sheet lined with parchment paper.

  3. For the cinnamon sugar coating, combine the stevia and cinnamon together in a small bowl. Roll each protein ball into the mixture to coat well.
