Clean Pizza Crust: 3 Recipes

By request!! PIZZA!!!! I’m sharing the three clean pizza crust recipes that I use: Cauliflower Crust, Coconut Flour Crust, and Sweet Potato Crust.  Both are pretty easy to make and delicious. As far as building the pizza from there... use the clean marinara sauce of your choice. My two favorite store brands are Rao’s and Victoria. But it’s also very easy to make your own homemade sauce using sautéed garlic, & onions, basil, oregano, a can of tomato sauce and a half a can of tomato paste. I also use just a little bit of cooking wine and granulated stevia in the sauce. You want to get a balance between sweet and acid, hence usually sugar is used to balance out the acid of the tomatoes. As far as toppings, go wild!! Whatever your heart desires.... And for cheese, I like to use shredded almond mozzarella but Follow Your Heart also makes some delicious shredded vegan cheeses and a nice vegan mozzarella in thick slices that you might want to try. 1. Clean & Crispy Cauliflower Crust-

Ingredients:

• 3 cups of frozen cauliflower florets (THAWED in refrigerator, NOT microwaved) • 1/4 tsp sea salt • 1/2 tsp dried basil • 1/2 tsp dried oregano • 1/2 tsp garlic powder • 1/4 tsp red pepper flakes (optional) • 1/4 cup shredded almond mozzarella or Follow Your Heart shredded vegan cheese • 1/4 cup grated vegan (Follow Your Heart) Parmesan cheese • 1 egg (OR 3 tablespoons ground flax seeds and 3 to 6 tablespoons water, as needed for a VEGAN option) • 1/2 cup almond meal

Directions- 1. Preheat the oven to 400ºF and line a baking sheet with parchment paper. Spray clean cooking oil onto the parchment. 2. In a large food processor fitted with an “S” blade (or in a blender) pulse the cauliflower florets several times, until a rice-like cauliflower “snow” is created. 3. Pour the cauliflower into the center of a thin dish towel, then twist it up and use your hands to firmly wring out moisture. A lot of liquid will be released so I’d do this over the sink. After wringing it out, you should be left with a dry lump of cauliflower “flour” pulp. 4. Place the cauliflower pulp in a large mixing bowl and mix in the egg, cheese, spices, and salt, stirring well to create a uniform mixture. Make a “dough ball” with your hands. (For the vegan option: instead of eggs, mix together 2 tablespoons of ground flax seeds with 3 tablespoons of water, to create a vegan “egg” mixture as a binding ingredient. Set it aside and allow the mixture to thicken before using it.) 5. Transfer the cauliflower dough to the baking sheet and press the crust firmly into a large circular or rectangular crust, (about ¼ inch thick, or a little thicker if you prefer). Try to make it an even and uniform thickness. Be careful not to have any thin spots where the crust might crack. 6. Bake for 30 minutes, until the top is golden and dry to touch. Using a second sheet of parchment paper on top, carefully flip the crust over and bake for another 10 minutes. (This trick works beautifully for any of these crusts). 7. Use immediately as a pizza crust (or even as a flatbread to slice and use as sandwich bread. Or you can freeze it for later use.) To make a pizza, add sauce, cheese and toppings. Bake for another 10 minutes at 400ºF, until the toppings are heated and the cheese is melted. Slice with a pizza cutter as you prefer.

2. Coconut Flour Pizza Crust

Ingredients

• 3 eggs • ¼ tsp salt • ¼ cup coconut oil, melted • ¼ cup + 3 Tbsp coconut flour • 1 Tbsp baking powder • ½ tsp oregano • ½ tsp garlic powder

Instructions 1. Preheat the oven to 350°F. Line a baking sheet with parchment paper. 2. In a mixing bowl, whisk together the eggs, salt and melted coconut oil. 3. Add the coconut flour, baking powder, oregano, and garlic powder and whisk until smooth. 4. Transfer the dough onto a baking sheet and spread into the round shape of a pizza, about ½ inch to ¾ of an inch thick. 5. Bake for 18 minutes, or until the crust is golden brown. 6. Remove from the oven, reduce the oven temperature to 325°F, and add your favorite toppings. 7. Bake for 2-3 minutes to heat up the toppings.

3. Sweet Potato Pizza Crust Ingredients: • 4-5 sweet potatoes (yellow or white), peeled, cubed, boiled and mashed • 2 cups of oat flour • small bowl of water

Directions- 1. Preheat oven to 400F. Combine the flour with the mashed sweet potatoes until well mixed. Shape into a ball of dough by dipping your hands in the water and rolling the mixture between your hands. (The water is just so the dough doesn’t stick to your hands). 2. Then flatten the ball into a crust (about 1/3 inch thick) on top of a baking sheet lined with parchment paper. 3. Then bake at 400F for 15 minutes until just browned at the edges. (After you put your toppings into the crust, bake for another 8-10 minutes).
