Hey everyone...sorry I’ve been out of commission recently. I’m recovering from a kitchen accident that caused some burns. Not to worry...I’m healing just fine, but I haven’t been able to cook or spend time in the kitchen since last week, so my creativity is being sequestered a bit! Here’s a delicious, easy, and clean recipe for healthy, baked chicken nuggets that satisfies that craving for crispy nuggets and a yummy dip. And these are KID-APPROVED!! So so easy, so yummy and so healthy. (And they make great snacks!!!) As always, please post your comments and photos. Enjoy!!
Chef’s Note: This recipe makes 25-30 nuggets, at about 40 calories per nugget. The dip also makes a great salad dressing, if you add a little more vinegar.
Ingredients-
• 1 pound ground chicken
• 2 cups grated zucchini
• 2 cups grated sweet potatoes
• 2 Tbsp coconut oil or avocado oil
• 3 Tbsp coconut flour
• 1 tsp garlic powder
• 1 tsp onion powder
• Salt & pepper to taste
Directions-
1. Preheat oven to 400F. Combine all ingredients in a large bowl.
2. Shape into one-inch-square nuggets/patties.
3. Place onto a baking sheet that's lightly sprayed with a clean oil.
4. Bake at 400F for 30 minutes, flipping halfway through.
Avocado Citrus Dip- in a blender combine 2 avocados, 1/4 cup orange juice (may omit or use the juice of one lemon), the juice of one lime, 2 Tbsp apple cider vinegar, salt, & pepper.
