I always promise that my recipes are easy even if they may seem “fancy! This is one of my family’s favorites and it truly is quick and easy. I'm so happy that I found a way to make a classic Hollandaise sauce that we can eat cleanly!!!! I usually make the frozen grilled asparagus from Trader Joe's which are just as good as fresh, I think, and easy to prepare. This is clean, gluten free, and dairy free. The Hollandaise sauce is 30 calories per tablespoon. It’s the perfect accompaniment for fish, poultry, veggies, and of course eggs!

Ingredients- • 3 tablespoons coconut oil or avocado oil • 2 egg yolks • 2 tablespoons lemon juice • 1/2 teaspoon salt • 1/8 teaspoon paprika • 1/8 teaspoon tapioca flour Instructions- 1. Heat the oil in small bowl in the microwave for 30-40 seconds. 2. Blend the egg yolks and lemon juice in a blender. 3. With the blender on low, slowly pour in the hot coconut oil in a steady stream. (The heat from the oil cooks the yolks, as hot butter usually does in a traditional version). 4. Season with salt and paprika, then pulse a few times to combine. 5. Add the tapioca flour and blend again briefly. 6. Serve over asparagus, (or salmon, or eggs "benedict", or anything you want!!)
