Buffalo Chicken Sliders & Apple Broccoli Slaw

Right after the big state championship win this past winter, our conquering football hero requested buffalo chicken sliders for dinner tonight. Of course, I was determine to both oblige him AND to be able to enjoy them myself!! I did everything in my culinary powers to make them the way he likes them AND make them clean. Wow were they popular!! (My little one shoved them into her mouth while standing up!! What a lady! But you may find that you want to do the same!)

I also served them with baked sweet potato fries for the kids as well as extra buffalo sauce & ranch dressing on the side. I made a set of sliders on both Hawaiian Slider Buns (for the kids) and Ezekiel Hamburger Buns (sprouted grain) for me. I used regular shredded mozzarella for the kids & shredded almond cheese for me. My "clean" slider was 377 calories. Each cup of slaw was 57 calories. This chicken mixture would also make a great nacho topping, salad topping, or wrap filling!

Ingredients • 1 rotisserie chicken (shredded) • 3/4 cup Frank's buffalo sauce (or more) • 1 onion, chopped • 2 tsp garlic powder • 2 tsp ranch dressing mix/powder (may omit, but it's just a little) • 1 pkg slider buns and/or Ezekiel buns • 3 cups shredded mozzarella/almond cheese

Apple Broccoli Slaw • 1 pkg broccoli or rainbow slaw • 2 green apples (grated) • 1/2 cup coconut milk yogurt or almond milk yogurt (unsweetened) • 1/4 cup apple cider vinegar • 2 Tbsp lemon juice • 1/2 tsp dill weed • 1/4 tsp chili lime powder (Trader Joe's) *********** 1. Preheat oven to 375F. 2. Shred rotisserie chicken into a sautée pan. 3. Combine buffalo sauce, onion, garlic powder, and ranch dressing mix (may omit, but it's such a small amount...the flavor is worth it!) with chicken over low heat. Stir occasionally until heated through. 4. Slice slider buns/Ezekiel buns in half, placing bottom halves in casserole dish. (If using small Hawaiian slider buns that are attached together, cut them into two "sheets" and place the bottom half in the dish all as one big bun). 5. Sprinkle some of the shredded cheese onto buns. 6. Place chicken mixture onto buns. Drizzle more buffalo sauce on top of chicken, if desired. 7. Sprinkle the remainder of the cheese onto the sliders and then cover with top of bun. 8. Bake for 20 minutes at 375F. 9. While baking, prepare the slaw. Combine broccoli slaw and the grated apples into a bowl. Pour the vinegar, lemon juice, and yogurt over the slaw and toss the mixture to combine then ingredients. Add the chili powder and the dill, then toss again. 10. Remove sliders from oven, cutting them into squares in order to pull them apart. Serve with apple-broccoli slaw.
