So here’s a collection of some of my favorite chicken marinades that I’ve worked on over the last few grilling seasons. They’re perfect for chicken but the ALSO can be versatile additions to other proteins as marinades or even sauces. And here’s another trick: add a little vinegar (or extra vinegar) and you’ve got a great salad dressing. You can whisk these all by hand but I personally like to use a small blender or stick blender. If you do that, always add the oil last and slowly. That will really get the ingredients well emulsified into a mixture that doesn’t separate. Two of these are popular parts of other recipes here (teriyaki and BBQ). The others are marinades and dressing bases that I use frequently in my kitchen at work and at home. I haven’t included directions other than what I just wrote here because it’s basically a blend, pour, soak & cook operation. I’d marinate the chicken (or other protein) in the fridge for at least an hour but the longer the better. Then grill or bake or cook how you please. As always, post your photos and comments & enjoy!
1. Teriyaki Marinade/Sauce:
• 1/2 cup coconut aminos
• 3 Tbsp rice wine vinegar (or white vinegar)
• 4 tbsp water
• 1 tablespoon honey or 1/2 tbsp granulated stevia
• 2 cloves garlic, minced
• 2 teaspoons grated ginger (or 1 tsp dried ginger)
• 2 teaspoons tapioca flour
• 2 tsp sesame seeds
2. BBQ Marinade/Sauce:
• 2 cups tomato sauce (canned)
• 2 tbsp tomato paste
• 1 tbsp Dijon mustard
• 1/4 cup balsamic vinegar
• 1 tbsp apple cider vinegar
• 2 tbsp coconut milk (canned)
• 1/4 cup olive oil
• 1/4 cup honey (or 1 tbsp granulated stevia)
• 1 tsp. paprika
• 1/2 tsp cayenne pepper
• 1/4 tsp ground coriander
• 1/4 tsp cinnamon
• 1 tsp liquid smoke (optional)
• 2 tbsp onion powder
• 1 tbsp garlic powder
• 1 tsp each salt & pepper (to taste)
3. Sweet & Sour Marinade:
• 4 Tbsp coconut aminos
• 1 cup chopped pineapple, mango, or peaches
• 2 Tbsp extra virgin olive oil
• 2 Tbsp honey or granulated stevia
• ½ tsp garlic powder
• ½ tsp minced ginger (or 1/2 tsp dried ginger)
• 1 tsp salt
4. Chimichurri Marinade:
• 2 Tbsp extra virgin olive oil
• 4 Tbsp red wine vinegar
• 1 tsp dried or fresh cilantro
• 1 tsp dried or fresh parsley
• 1 tsp cumin
• 1 tsp each salt & pepper
5. Chipotle Marinade:
• 2 Tbsp extra virgin olive oil
• 2 Tbsp chipotle sauce (from the can) plus ONE of the peppers from the can minced or blended
• 4 tsp minced garlic
• 1 tsp garlic powder
• 1 tsp paprika
• 1 tsp onion powder
• 1 tsp salt
6. Honey Mustard Marinade:
• 2 Tbsp extra virgin olive oil
• 2 Tbsp Dijon mustard
• 2 Tbsp honey
• 1 tsp paprika
• 1 tsp salt
7. Lemon Garlic Marinade:
• 2 Tbsp extra virgin olive oil
• 2 Tbsp lemon juice
• 4 tsp minced garlic
• 1 tsp crushed red pepper flakes
• 1 tsp each salt & pepper
8. Coconut Curry Marinade:
• ¼ cup unsweetened coconut milk
• 4 Tbsp coconut aminos
• 1 tsp curry powder
• 1 tsp garlic powder
• 1 tsp salt
9. Balsamic Marinade:
• 2 Tbsp extra virgin olive oil
• 2 Tbsp balsamic vinegar
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• 1 tsp each salt & pepper
